A ceiling that has stopped dripping is not a ceiling that has dried.
The assembly between two floors is a sealed box: joists, insulation, subfloor above and drywall below. Water that gets into it has nowhere to evaporate to, and the visible drip stops long before the cavity gives up its moisture.
