A Water Category Is Not a Permanent Label
Most explanations of the three IICRC water categories stop at where the water came from. In a warm, humid market the more useful half is that a category moves, and it only moves one way. Category one is the clean water from a supply line or a water heater connection, sanitary at the moment it escapes. Left standing in a warm Suffolk building, feeding on drywall paper, dust and whatever is in the carpet, it stops meeting that definition within a couple of days and has to be treated as what it has become.
Category two, the gray water from a washer, a dishwasher or an overflowing fixture, already carries contaminants, so it degrades the same way and does it faster. Category three covers sewage, drain backups and storm water that crossed the ground on its way in. That one never improves and is never treated as anything less than what it is: protective equipment, aggressive removal of porous material, and complete sanitizing of everything that stays.
